When I first saw these Recovery Rice Crispies, I thought they looked great. But, after reading the recipe and looking a little more closely at the photo, I realized the photo had nothing to do with the recipe. If I read the recipe correctly, there’s no way these would hold together like a Rice Krispies Treat.
Now, there are ways to make vegetarian marshmallows, but these don’t have veggie mallows in them. But, nonetheless, they intrigued me. Protein powder in a Krispie treat, hmmmm.
Then, I received a sample of cereals from Attune Foods (by the way, I think their blog is great, take a look). And, in the sample was a box of Crispy Brown Rice cereal. What better way to try a recipe than with my awesome sample!
Now, baking the protein powder does degrade some of the protein. Personally, I believe that most people get plenty of protein (even vegans and vegetarians). So, I’m not worried about the amount of protein I consume and I’m not attempting to increase my intake. I was just interested in this treat to see if it worked or not.
I think it’s delicious! The vanilla flavor is great. It’s definitely not a bar treat, but more of a cereal or a granola. I ate it for breakfast with almond milk and it was awesome. I think it would be great over yogurt or fresh berries. Think of it as a crumble, and you won’t be disappointed. (Hmm, maybe it would be good over a cobbler or a pie.) The crispy brown rice cereal from Attune, was a great addition to the flavor, as it was nuttier and crunchier than the big name brand.
I used almond oil, but any light flavored or nutty flavored oil would work. And, if you measure the oil first, and then the honey, the honey will just slide right out of the spoon, no muss no fuss.
I think next time I’ll try baking it on a cookie sheet in one layer so that all gets nice and golden brown, though the bake time might need to be decreased.
- 1 ½ cups crispy puffed rice cereal
- ½ cup old-fashioned oatmeal dry
- 2 scoops vanilla protein powder
- 2 tablespoons almond oil coconut oil, or light tasting oil
- 2 tablespoons honey
- ½ teaspoon vanilla extract
- Preheat oven to 325 F. Lightly coat a 9x9 baking pan with cooking spray.
- Mix the cereal, oatmeal, and protein powder together in a large bowl. In a smaller bowl, mix together the wet ingredients (oil through vanilla). Pour the wet ingredients over the dry, and gently mix to combine. Scoop the mixture into the baking pan, and lightly press down to even it out.
- Bake for 10-15 minutes or until the crisp and golden brown.
