I first made this salad for my sister-in-law’s baby shower in the summer of 2013, and I’ve been waiting for the stone fruit to be ripe ever since summer ended last year so that I could make it again.
Basil or Mint
Since that first time I made it, I’ve made a couple of changes, most notably, the addition of basil instead of mint to the syrup.
Both are awesome, but I like the little bit of grown-up savory flavor that basil adds.
If you aren’t feeling adventurous, by all means, use mint instead of basil.
But, I highly encourage you to try it; I think it’s amazing.
The way the flavors come together in this salad is just amazing.
Peaches and nectarines all ripe with their sweet juicy essence of summer.
Sweet strawberries, all mixed up with a tart citrusy lime syrup.
My husband and I went to a nice farmer’s market this past weekend, and there was a whole booth just dedicated to stone fruits (for those of you who don’t know, a stone fruit is a fruit with a big pit [or stone] in the middle, like a peach, plum, nectarine, or cherry).
Well, I bought a whole bunch of fruit from them, and was so excited to bring it home and eat it all up.
Rainer Cherries
One of the things I bought was a small container of pretty Rainer Cherries.
I’ve been sending them with my husband to snack on at work. He came home the other day telling me how much he liked them, and how great fruit is.
It was so awesome! I’ve converted him to liking fruit!
Well, maybe it’s not really my doing. Maybe it was more that the fruit was so fresh and perfectly summery. But, I’m still going to take the credit.
In my Summer Salad recipe post I talked a little about peaches, giving tips and tricks. I wanted to share a picture of the freestone white peach.
Freestone means that the pit easily detaches from the fruit, as opposed to cling, which means that the fruit clings to the pit or stone.
Make it vegan
Oh, and one other thing, if you’re vegan, sub the honey for a liquid sweetener of your choice, like simple syrup or maple syrup.
