Although I’m not posting menus for the Healthy Eating Project any longer, I’m sticking with the healthy, good stuff. I just love the way it makes me feel. Here are some recent highlights, or some More Healthy Food…
I love this healthy combo of fruit and yogurt. Add any fruit (strawberries, kiwi, blackberries, banana, melon, peaches, grapes, anything) and top it with vanilla yogurt or plain yogurt. I love this European style yogurt; it’s very thin (as opposed to those thick Greek yogurts), and makes a great sauce. And, as a special treat, I topped the fruit and yogurt with homemade granola. So yummy!
This is my favorite salad, especially in the summer when all the fruits and veggies are at their prime. I take a handful of fresh green beans and lightly saute them in olive oil. Chop up a super fresh and juicy peach. Chop up an avocado. Cup some kernels from a grilled ear of corn (or if you don’t have corn on the cob, skillet toast some frozen corn until it is golden brown throughout). Toss that all together, and sprinkle with some good sea salt. Oh yum! Sometimes I’ll add mushrooms to it too. Yep, simple and fresh.
