The weather was beautiful yesterday; it rained pretty much all day. A light rain. A soft rain most of the day. The kind of day that you want to curl up on the couch with a cup of tea or a warm cup of coffee. It was a great day. And, I’m happy that I’m finally starting to kick this cold. Maybe I can get back to getting things done. And, I can get back to exercising. Oh, and back to the garden.
With that, here’s day 4’s menu:
breakfast: coffee. strawberries and raspberries with plain yogurt and cherry-plum jam
lunch: leftover minestrone soup (that sure lasts a long time!) with shredded mozzarella and green peas
snack: club soda with homemade raspberry rosemary syrup and boiled egg whites and a couple peanut butter cookies
dinner: layered potato and onion casserole with thyme creamed corn sauce
I wish you all a great and happy unprocessed day. Or, if you haven’t taken the challenge yet. Maybe you could try it for just a day. It’s really cool, and I think everyone should try it, even just a little.
