Spicy Lentil Sweet Potato Salad is a delightful and vibrant way to enjoy lots of fruits and vegetables including roasted sweet potatoes, sweet black grapes, earthy lentils, crunchy pepitas. Tossed in a zesty Chipotle Vinaigrette, this refreshing dish offers a perfect balance of flavors for a wholesome and satisfying meal.
Salad to showcase my Chipotle Vinaigrette Dressing. Now, you can use this dressing on any salad you like (I got a few comments about how it’d be great on a Taco Salad, and that sounds yummy!). We use the dressing all the time around here on just about any salad.

How to cook sweet potatoes
You’ll find the instructions for the Roasted Sweet Potatoes here. I love these Sweet Potatoes for everything from breakfast to dinner. They make a great side dish, or a wonderful addition to Enchiladas or Salads.
Salad inspiration
I chose black lentils for this salad because of their pretty color. They’re also called Beluga Lentils because the little shiny black cooked lentils look like Beluga caviar.
They’re super healthy too, high in protein and fiber. Dry lentils can be quickly cooked on the stove top; just follow the package directions. Or, you can use canned lentils if you want to make prep time a little shorter.
Pepitas are simply hulled pumpkin seeds. They’re super crunchy and delicious.

This salad encompasses some of my favourite things – spinach, lentils, and sweet potatoes. The chipotle dressing is just the icing on the cake! I’m so glad I made this for dinner tonight. I added some shredded chicken to it as well.

That is so good. We loved it. Marinated some chicken in the leftover dressing and made it again with the chipotle chicken.

This is amazing! I couldn’t find those lentils so I used just regular brown ones. Still so good.

I really love the colors of this salad! It came together easily once I had the sweet potatoes roasted. I put it all on a bed of kale. And I make extra dressing to use on other salads and like someone else said, to marinate chicken and a steak maybe.
