Sandwich Week

Whew! It’s been a busy week. Each night this week we’ve had sailing lessons from 5 to 8pm. We can’t go sailing on empty stomachs; so, it’s been my job to make a portable, easy to eat, and tasty dinner each night. To me, that calls out for sandwiches. I think when most people hear sandwiches, they get happy! But, not so, the husband. Well, that is, until the middle of this week.

The husband was never all that interested in food until he met me. I’ve shown him the ways of the tasty goodness. And, to him, a sandwich is bologna with Miracle Whip on white bread. Au contraire, mon frère, a sandwich can be so much more. And, he likes what I’ve made for him. So, here are this week’s sandwich creations. Now, I still have to come up with four more for next week!

Oops! I forgot to take a picture of this one. It was lemon sesame “chicken” with goat cheese and roasted red pepper on a poppy seed roll

Night 4

Garden Delight: grilled zucchini with lettuce, shredded carrot, avocado and hummus on wheat rolls

And, of course, for dessert… Ice Cream Sandwiches! Yummy!!!
