Sometimes inspiration comes from simple things. Like, “what to do with the leftover melted chocolate that was used for dipping the Black Forest Rum Balls?”
I don’t like to throw food away. And, I’m not a big fan of just sitting down to eat a bowl of melted chocolate. (I’m not going to say that I haven’t done it, I’m just sayin’ that I’m not a fan of doing so.)
That brings me to Chocolate Nuts & Berry Clusters… (drool, drool…)
I took the leftover melted bittersweet chocolate, stirred in a little whole milk (there was some whole milk in the refrigerator leftover from Thanksgiving) to thin it out and create a little ganache. Then I stirred in some dried fruits that I had in the cupboard. (See, those cupboard items really do come in handy). I found some dried cherries, blueberries, and cranberries. Then, I wanted it to have a little crunch, so I toasted up a handful of pecans and threw those into the mix as well. I have a friend that even throws some Cheerios into the mix. They add a nice crunch.
As for proportions, you just want the nuts and fruits to be held together with the chocolate, so it’s always better to start with fewer fruits and nuts and to add more later if you still want more stuff mixed in.
Portion out bite sized clusters onto a sheet of waxed paper. Then, refrigerate until hardened, and enjoy.
And, there you have it, a nice healthy treat with fruit, nuts, and (high in antioxidant) dark chocolate that you can feel good about snacking on.
