The folks at Capresso sent me this awesome Personal Coffee Maker. I thought I’d share this little coffee maker along with an awesome recipe for Coconut Milk Coffee Creamer. This creamer is vegan, gluten-free, paleo-friendly, no processed sugar, no preservatives, healthy fats from whole foods, free from trans-fats, and (most important) super tasty!
The Personal Coffee Maker would be great for a dorm room, or small apartment, as it takes up just a little bit of space. And, it makes coffee in a flash! It only took about 3 minutes to make a full cup. So, it would also be great for anyone who’s in a hurry on a busy morning. Maybe you’ve got to drive the kids to school and there’s no coffee. Start this to brew while you throw some shoes on, and you’re all set with a fresh hot cup of coffee that’s all ready to go in a nice mug! And, with a thermal mug, it keeps the coffee hot for quite a while.
I love that this Personal Coffee Maker has a reusable permanent filter, so no paper liners are needed. Less trash always makes me happy!
After I made my cup of coffee I poured in this delicious Coconut Milk Coffee Creamer, and couldn’t get enough of it! Honestly, I ate more than one spoonful of the creamer straight from the jar! It was that good!
- ½ cup dates, pits removed
- 1 can (13.5 ounces) coconut milk
- ½ tablespoon vanilla
- Add all ingredients to the bowl of a high-speed blender, and process until smooth, scraping down the sides of the blender, as necessary. Pour the creamer through a fine mesh strainer to remove any little bits that remain. Store in a jar with a tight fitting lid in the fridge for up to a week. Creamer will thicken as it stands in the fridge.
- Makes about 2 cups
- I figured about 2 tablespoons per serving, so 16 servings, but that might vary depending on how much you put in your coffee
