This year (2011) I cooked Christmas Breakfast. I wanted to do something a bit traditional. I’ve been doing Huevos Rancheros and Chilaquiles fairly often for special breakfasts, so I wanted something different. Something more traditional. I decided on the following menu. I’ll be posting the recipes separately.
Eggs Benedict with Avocado, Canadian Bacon (for those who eat meat), and Chipotle Sauce. These were simply awesome. I’m a big fan of eggs Benedict & order it often if we go out for a nice breakfast. I always get it without the Canadian bacon. My husband told me that he’s never had Eggs Benedict before. I can’t say that he’s really had it now, as mine didn’t have Hollandaise on it. And, well, mine had avocado. Dan wants me to call it Huevos Benedicto (Mexican Eggs Benedict). The chipotle sauce added just the right spicy kick to the creamy eggs and avocado without being hot. And, the sauce is lighter in fat and calories than the butter and egg yolk laden Hollandaise sauce.
Roasted Potato Stacks crispy on the edges with a soft, almost creamy center. These are impressive looking as well as tasty. They require a little bit of assembly time. If I were making these for a regular dinner, I think I’d make simple “chips” – just one layer of potato so you get more crispy crunchy parts. But, as part of Christmas breakfast, they were really pretty.
Lemon Tiramisu My mom can’t have caffeine (it gives her migraines). So, that means no coffee or chocolate. But, she loves tiramisu. And, I love the light airiness of this lemon tiramisu. And, you simply can’t go wrong with lemon curd and whipped cream as a special dessert treat.
