Ok, let’s be honest. You made some New Year’s resolutions to be healthier. Maybe to eat healthier or exercise more or something. And, well, it’s the middle of January, and your enthusiasm may be waning a little. Maybe just a little! That’s where my Shaved Broccoli Salad comes in.
I’ve made a different recipe for Maple-Thyme Roasted Carrots for a few years now. The reason I decided to try this new recipe for Christmas Eve Dinner 2014. was that it’s all hands-off time in the kitchen. It takes a bit longer to roast them like this, but there’s no real work for the cook during that roasting time. And, yes, these times are correct, a total of 100 minutes in the oven. But it gets you a beautiful yummy carrot!
I was very honored when Tara at Noshing with the Nolands asked me to guest post on her blog. I think Spanish Paella is a great special dish; it’s fancy and filled with yumminess. But, I think most people aren’t going to take the time to get a Paella pan and cook up a big batch of the seafood & rice stew. Thus, enter the Quick and Easy Paella made with orzo instead of rice. All the flavors of Paella, but easier and more accessible to many people, and, my version has lots of veggie goodness.
I’m pretty sure that every meal could be tacos, and I’d be a happy camper. Of course, tacos can be pretty much anything stuffed inside a tortilla. My husband always laughs when I say that we’re having tacos for dinner because he says that doesn’t mean anything… what’s inside these tacos? Well, I love this…
