It’s time for another Island Trollers recipe. This is one that I’ve been thinking about since I started writing recipes for them. I thought a nice creamy sauce with the heat of a habanero tuna would be so awesome. And, boy, did this recipe deliver! Tasty, creamy, pretty easy too.
This is a great late summer dinner or lunch! Fresh, healthy, super yummy! The snap peas are crunchy with just the right hint of spice. The corn is sweet and fresh tasting, and is cooked in a bath of creamy coconut milk adding to the creamed corn feeling. And, the Island Trollers albacore tuna just tops it all off rounding it up with a lightly salty fresh flavor.

Baked Island Trollers Tuna Artichoke Spread: a nice twist on hot spinach dip. And, it’s perfect served at a holiday party all hot and cheesy with some French bread or crackers.

A Salad Niçoise is a fresh healthy mixed salad with lots of veggies topped with tuna and Niçoise olives. It usually has haricot verts (or green beans) and is topped with vinaigrette. My version is with Island Trollers delicious caper tuna.
