So, I decided I’d create a recipe that felt inspired by Justine, not only using the color orange, but to make a simple recipe using whole foods that are loaded with flavor. And I bring you Toast with Sweet Potatoes and Chimichurri Sauce.

This Tailgating Snack of Baked Sweet Potato Fries with Mac & Cheese Sauce and Chimichurri is filled with yummy veggies, herby Chimichurri Sauce, and creamy rich Mac & Cheese Sauce. It’s like the best of all worlds on one plate. Healthy, yet decadent. Fresh, yet rich and creamy. And all those colors! And yes, it is as yummy as it looks!
I created this Spicy Lentil and Sweet Potato Salad to showcase my Chipotle Vinaigrette Dressing. This salad with its combination of roasted sweet potatoes, sweet black grapes, earthy lentils, crunchy pepitas, and spicy dressing is so awesome!
My menu for Thanksgiving 2013 included Cheese Puff Bread, Raw Pecan Chocolate Date Bars, Roasted Cranberry Sauce, and Chipotle – Maple Mashed Sweet Potatoes (recipe included). The Chipotle – Maple Mashed Sweet Potatoes is my husband’s favorite, and he always asks me to make it!
