For this Hot Vegetarian Italian Sub I have sauteed mushroom and peppers tucked into a hoagie roll then topped with creamy Bertolli® Alfredo sauce. That’s all toasted up under the broiler so the bread gets a little golden, hot, and a little crunchy (but not too much). Then it’s all crowned with some delicious avocado, tomato, and lettuce. This Gnocchi with Balsamic Tomatoes and Caramelized Onions is one of those really easy recipes that I like to make for lunch. I almost always have some Balsamic Roasted Tomatoes in the freezer. I take them out of the freezer, and defrost them in the microwave. Cook up an onion, and boil some water for the gnocchi, and gnocchi only takes about 2-3 minutes to cook. It’s pretty easy, and very minimal chopping (which makes me really happy on some of those busy days).
