I wanted to make a nice Spring Salad; an ode to spring, with all the best freshness that spring has to offer. And thus, The Spring Salad with White Balsamic Basil Vinaigrette was created!
A Salad Niçoise is a fresh healthy mixed salad with lots of veggies topped with tuna and Niçoise olives. It usually has haricot verts (or green beans) and is topped with vinaigrette. My version is with Island Trollers delicious caper tuna.
Here’s a great quick weeknight dinner that’s healthy and tasty. Toasting the pasta in the oven brings out a nutty flavor. Then, the pasta’s cooked in spicy vegetable broth, giving the dish even more flavor. The creamy ricotta helps to balance the spicy cayenne pepper. And, the veggies add a nice crunch to the dinner.
