This Gnocchi with Balsamic Tomatoes and Caramelized Onions is one of those really easy recipes that I like to make for lunch. I almost always have some Balsamic Roasted Tomatoes in the freezer. I take them out of the freezer, and defrost them in the microwave. Cook up an onion, and boil some water for the gnocchi, and gnocchi only takes about 2-3 minutes to cook. It’s pretty easy, and very minimal chopping (which makes me really happy on some of those busy days).
This Red Pepper Corn Soup with Gnocchi is perfect for these cooler months. Tangy red pepper, sweet corn, a little kick from spicy Sriracha. And, then, top it all off with soft Gnocchi to sink your teeth into. Well, it all just works so well. And, it’s a great way to get your kids (or your husband) to eat their veggies!
