Tailgating Month on the Blog is so much fun! And, I’m excited to bring you the next yummy idea! This one’s more of a main dish, rather than just a snack. It’s super yummy and really fun! These Corn Fritters are great by themselves, but pair them with some avocado and enchilada sauce, then serve on a Pretzel Bun… we’re talking tailgating heaven!
Salmon Burgers or What To Do with Leftover Salmon: We had so much Salmon from that Cedar Plank Grilled Salmon that there were a ton of leftovers. What’s a girl to do with leftover Salmon? You guessed it! Salmon Burgers. These were not only really easy to make, they were quick to cook up, and they were super tasty!
Last week I made my Smoky Black Bean Chili for dinner. It’s great because it cooks in the crock pot, leaving the kitchen nice and cool. Since it makes a big ‘ol pot of chili there were lots of leftovers that I stuck in the freezer. And, last night I made enchiladas with the chili, some more black beans, zucchini, and corn. Man, was it yummy!
So there you are with a jar of homemade Easy Enchilada Sauce in your fridge. And, there are those flatbreads that you bought over on the counter. And, well, you might be feeling adventurous, and that’s how this Mexican Flatbread Pizza happened. Spread the flatbread with some Easy Enchilada Sauce, throw on some Mexican toppings… sweet corn with savory Enchilada Sauce and spicy Pepper Jack cheese, and top it all off with creamy avocado, and you’ve got yourself an amazing Mexican Flatbread Pizza.
