I often find that I have a small hunk of Parmesan left in the cheese drawer of the fridge. And, lately, I’ve been using that leftover hunk in this Cheese and Herbed Oil.
My husband’s birthday was last week, and for his birthday he asked for Chilaquiles (or breakfast nachos). At one point in making the sauce, you take the ingredients and “process (in a blender) to a smooth puree. Press the mixture through a medium-mesh sieve into a bowl, discarding the solids”. Well, it was at this discarding stage that he had a great question, “what are we going to do with those solids?” and, the chile dip was born!

Making your own broth is so easy. And, so healthy. You really don’t have to just buy it in a can with all that sodium; try making your own. I promise, you’ll like it. It’ll make your soups richer. Your casseroles, tastier. Your sauces, saucier.
