I love mac & cheese. But, I don’t eat it very often because of all the calories & saturated fats. But, this one’s awesome! With all that butternut squash, you can cut back on the cheese without losing flavor or creaminess. All the pleasures of mac & cheese with no guilt!
This dish makes a great fall dinner or lunch. And, it makes a great budget-friendly weeknight meal. The roasted lentils give a nice spicy smoky crunch to the dish. The smoky roasted broccoli helps lighten it up, while the sausages (even if they are vegan) are meaty and yummy.
as part of my remaking our childhood favorites, I thought I’d take on the Rice-a-Roni copy cat challenge. The Homemade Broccoli Au Gratin Rice-a-Roni is really close to the original. And, I have a Mixed Veggie Rice-a-Roni that has way too many veggies to be compared to the boring packaged stuff!
I debated about what to call this pasta sauce. Awesome pasta. Pasta with awesome sauce. Freakin-tasty-yummy-goodness. Or, with the simple and descriptive Avocado-Miso-Tahini Sauce. Or maybe vegan creamy Alfredo sauce.
