I wanted to make a nice Spring Salad; an ode to spring, with all the best freshness that spring has to offer. And thus, The Spring Salad with White Balsamic Basil Vinaigrette was created!
A Salad Niçoise is a fresh healthy mixed salad with lots of veggies topped with tuna and Niçoise olives. It usually has haricot verts (or green beans) and is topped with vinaigrette. My version is with Island Trollers delicious caper tuna.
This time, for Seafood for the Future, I made Seared Albacore Tuna and served it on a bed of Potato Puree with Roasted Asparagus. I wanted to prepare and serve the tuna as simply as possible. As I learned in my research, “the best fish dishes are where the fish is simply prepared.
