Use It or Lose It Week or Summer Veggie Frittata

This week is “Use It or Lose It Week” in our house. That means I try to use all the bits and pieces in the ‘fridge before they go bad. Last night, we had Summer Veggie Frittata. Yummy. Tonight will be orzo cooked in Parmesan broth with pine nuts and sautéed zucchini and red bell pepper. (As you guessed, I still have zucchini to use up).

Honey Lemon Marmalade

This honey marmalade, made with the last of the Neighborhood Fruit, is sweet and tart, and the texture is great. It makes quite a bit, so I have lots for sharing.

Cookbook update- “Cupboard Cooking”

I’ve been testing recipes for the cookbook for a while now, and feel pretty happy with the content. I have about 70 recipes ranging from breakfast to soup to main dish and onto desserts.

Cupcakes are fun, and everyone seems to like them- even people who don’t really like cake. Something about cupcakes makes you feel like a kid again. Maybe it’s the size- they fit right in the palm of your hand. And, they’re devoured in a couple bites.
